Honest Health Date Oatmeal

I am one of those people who completely loves autumn. It is my favourite season. The colours, the light, crisp air and comfy sweaters or jumpers to cuddle in.

 

One thing that I’ve struggled with is finding breakfasts that match my desire for cozy when I usually grab a bowl of granola or cereal in the morning or a simple slice of toast.

 

I have enjoyed oatmeal my whole life but I find that I get in a rut and it can become very dull and repetitive. Around this time last year, I stumbled upon a delicious recipe that not only is original but it is truly yummy. It can be served warm (which is how I prefer it) or because you can prepare it ahead of time you could equally enjoy it cold like an overnight oats situation.

CASHEW & GINGER ENERGY BALLS

I made these beauties the other day on a whim. I was an hour (okay, 2 hours!) into a Youtube foodie viewing spiral and saw that Deliciously Ella had posted a few videos on her new energy balls. She has three to choose from. A hazelnut & raisin, cacao & almond and the cashew & ginger. I watched all of them and decided then and there to get up and make some. Luckily I had all the ingredients and chose to try the cashew and ginger ones first. There are only 4 ingredients for these and from start to finish (including washing up) it took 15 mins! #Winning

They have just the right amount of ginger for me and feel like a treat while not being too decadent all at the same time. I wrapped a few up for one of my clients I was meeting up with later that day and knew she would enjoy them.

GingerEnergyBalls

I’m going to Scotland in the new year by train (yes, train!) and love knowing that I will have some healthy snacks to munch on.

I may seem a bit crazy to take time out of my holidays to journey by train but hear me out- the English countryside zooming past, a cup of tea and a journal with 4 hours to reflect on 2016 and to plan and dream about 2017. Also, it was cheaper and easier than getting out to the airport at 5am!

I cannot wait to share photos and thoughts from my time away. I have been dreaming of Scotland since I landed in the UK. I have this pull to the highlands. It seems so magical and dreamy. Can I get an ‘amen’ for that accent too?!I die! No? Just me? Okay…

I have space for 4 more clients starting in January. These spots won’t last long! A typical session with me looks like the following:
