SAUTEÉD KALE WITH POACHED EGG

Sauteed Kale w Poached Egg

Hello my Lovelies!

Today is all about this delicious meal I whipped up the other day. If you follow me on Instagram, you may have spotted it there.

It’s a very simple meal, but it’s packed with the yum & health factor!

Here is what you’ll need:

-3 C Chopped kale

-½ C Mushrooms

-2 Spring onions

-1 Clove of garlic

-Chilli flakes (optional)

-1 Egg

-3 tsp Hemp hearts

-Olive Oil

-S&P

Process:

Chop your mushrooms, spring onions and garlic. Sauté them in a bit of olive oil for 2-3 mins on medium heat. At this point, I would have added chilli flakes for a bit of heat, but had none on hand…sad times! Add kale and mix. Season to taste. After about a min, I added about 3 tablespoons of water to help steam the kale down.

While the kale is wilting down, bring a small saucepan of water to a gentle boil to poach your egg.

Assembly:

In a bowl, place your nice and hot sautéed veg and sprinkle with ½ of the hemp hearts. Place poached egg on top, and garnish with S&P and remaining hemp hearts and ENJOY!!

Bonus: I had some leftover grilled turkey breast that I popped on last minute. It was a wise choice my friends!

In total, it took 10 minutes from start to finish. Not bad for a quick lunch!
