Happy Foodie Friday!
This week is a baking treat to make your morning a bit sweeter!
I found this recipe about a year ago on Deliciously Ella, and I’ve made it at least 5 times! I love it. It has just the right amount of crunch, sweetness and cinnamon.
Here’s what you’ll need:
-½ C Almonds (I used Brazil nuts this time)
-1 C Pecans
-1 C Sunflower seeds
-2 ½ C Oats
-1 C Pumpkin seeds
-½ C Flax seeds (I used hemp hearts instead)
-1 C Raisins
-3 Tbs Coconut oil
-3 Tbs Maple syrup
-3 tps Cinnamon
Pre-heat your oven to 180C. Roughly chop the almonds and pecans. In a pot, melt the coconut oil and mix in the maple syrup and cinnamon. Add all the dry ingredients to a large bowl except the raisins. Pour the melted oil, syrup and cinnamon over the dry ingredients and mix well. Pour into a baking dish and spread it out evenly. Pop it in the oven for 30-40 minutes, mixing every 10 to ensure even browning. Let cool, and mix through the raisins. Store in an airtight container.
This will last for months, if you don’t eat it all by then!
I like to enjoy a ½ cup of this with a sliced banana and almond milk. YUM!
