CAULIFLOWER & LENTIL CURRY

Happy Foodie Friday! It’s the yummiest day of the week for sure! A few weeks ago I was over at my friend Nicola’s house for some girl time, and she made this meal for us to enjoy. I cannot express how simple, quick and delicious this meal is. Not only that, but it’s a great veggie option to put into your meal rotation. It makes about 5 generous servings.

What you’ll need:

Cauliflower & Lentil Curry

-1 Cauliflower head

-1 Red onion

-2 Cloves garlic

-1 400mL can of coconut milk

-1 Stock cube (any flavour)

-3.5 tsp Curry paste (I used a coriander one)

-½ Cup Split peas

-½ Cup Red or green lentils

-400mL+ of water

-Brown Rice (or grain of choice)

-S&P

Process:

Start by chopping your onion and garlic finely and roughly chop your cauliflower. Heat a pan with high sides to medium. Saute your onion and garlic until fragrant. Add both the lentils and split peas. Dissolve your stock cube in the 400 mL of water and then add to the pan. Mix in the curry paste and bring to a simmer. At this point, you allow the liquid to reduce, and test the split peas periodically to make sure they are cooked through adding more water as needed. Stir in coconut milk and test seasoning. You may want more curry paste, and some extra S&P. Once the flavour is where you like it, add the cauliflower in the last 10 mins of cooking. Serve over cooked rice, and garnish with fresh coriander.
