Happy Foodie Friday! It’s the yummiest day of the week for sure! A few weeks ago I was over at my friend Nicola’s house for some girl time, and she made this meal for us to enjoy. I cannot express how simple, quick and delicious this meal is. Not only that, but it’s a great veggie option to put into your meal rotation. It makes about 5 generous servings.
I discovered this life-altering salad when I was in my final year of college in Sydney. I was in the land of abundance when it comes to avocados and boy, did I embrace it! I ate an avocado a day! On toast for brekky, in a wrap a lunch and in a hearty salad for dinner. I may have needed a HIMYM intervention about it actually.
